Put the tomatoes, pepper, cucumber, onion, garlic, bread, olive oil and vinegar in a masher and beat to make porridge. Add salt and water and stir. Finely chop the parsley and add to mixture. Leave for at least 1 hour in refrigerator. Serve in 4 bowls and you can add extra olive oil, little feta and olives for extra flavour.
4. Cold melon soup
