1.Green Goddess Salad:

Cooking Without Fire Green Goddess Salad
A salad is perfect for all – healthy, great tasting and easy to make. Plus, you can have it on the side or as a whole meal. This Green Goddess salad features shrimp, artichoke hearts and other ingredients to get your taste buds excited. Check out the recipe:
Ingredients:

  • 1/2 of an avocado, peeled
  • 1 teaspoon of anchovy paste
  • 3/4 cups of nonfat buttermilk
  • Half a cucumber, slice
  • 2 tablespoons of chopped fresh herbs like chives
  • 2 teaspoons of white vinegar
  • 1 cup of canned chickpeas
  • 8 cups of bite-size pieces of green leaf lettuce
  • 12 ounces of peeled and cooked shrimp (mini)
  • 1 cup cherry or grape tomatoes
  • 1 cup of rinsed artichoke hearts
  • 1/2 cup of chopped celery

Directions:
Puree the buttermilk, herbs, avocado, vinegar and anchovy in your blender until it’s smooth. Divide your lettuce into a bowl or plate and place the shrimp, chickpeas, cucumbers, celery and artichoke hearts on top. Mix together well and top off with the dressing.

2.Chilled Melon Soup:

Avoid using heat and fire in the summer with this nice and light summer soup. Check out the recipe:
Ingredients:

  • 1/2 cups of diced cucumber
  • 6 cups of ripe melon
  • 6 tablespoons of lime juice
  • 1 cup of cold water
  • 1/2 cup of orange juice
  • 1 tablespoon of thin sliced scallion green, and another whole
  • 1 jalapeño pepper
  • 6 teaspoons of plain yogurt
  • 1 teaspoon of chopped fresh ginger
  • 1/2 teaspoon of kosher salt
  • 2 tablespoons of chopped cilantro or mint

Directions:
Measure one cup of lemon and combine into a bowl with 2 tablespoons of lime juice, scallion green and a cucumber. Put this in the fridge until the soup is ready. Put the remaining lemon into a blender with 4 tablespoons of lime juice. Chop both the scallion and cilantro, and add into the blender along with some orange juice, water, salt and ginger. Combine it together until smooth. Refrigerate the soup for two hours, then top off with cilantro and yogurt and serve

3.Italian Vegetable Hoagies:

Italian Vegetable Hoagies - Cooking Without The Use of Fire
This great sandwich packs all you need into one, with veggies and meat. Here’s the recipe you can try:
Ingredients:

  • 1 medium tomato, seeded and diced
  • 1/4 cup of thin sliced red onion
  • 1 14-ounce can of artichoke hearts, chopped
  • 2 tablespoons of balsamic vinegar
  • 2 slices of provolone cheese
  • 1 tablespoon of extra-virgin olive oil
  • 1 teaspoon dried of oregano
  • 1 20-inch-long baguette, whole grain!

Directions:
Get a small bowl and place onion rings and cold water inside. Set this bowl aside. Then, mix in artichoke hearts with the tomatoes, vinegar, oil and oregano in a medium size bowl. Cut the baguette or bread into 4 parts, or however many you want. Drain the onions. Next, divide provolone among the bottom slices of the baguette. Spread on the artichoke mixture and top off with onions and lettuce.
